Lentil Soup
A very simple, filling soup: really good with saltines. Don't worry, I won't bombard you with a storytime until the end of the recipe, if I decide I care enough. If you wanna read it, scroll down. Maybe eventually I'll figure out how to code the jump ahead thing.
Ingredients:
- 2.5 cups dry lentils
- 2 quarts of vegetable broth
- 1 yellow onion
- 2 celery stalks
- 3 carrots
- 3 tbsp tomato paste
- 1 tbsp olive oil
- 3 garlic cloves
- 1 tbsp red wine vinegar
- Seasoning of your choice
Directions:
- Prepare lentils:
- Fill pot with water and lentils and bring to boil. Simmer for 30 mins only
- Prepare veggies:
- Finely chop onion
- Slice celery and carrots in to bite sized pieces (soup size)
- Mince or chop garlic
- Start cooking:
- Add veggies to pan with oil and sautee, adding garlic last
- Add sauteed veggies, cooked lentils to crockpot or large pot with vegetable broth, tomato paste, and seasonings. Cook on medium for 2 to 3 hours until lentils have soaked up most of the liquid
- Once done cooking, add vinegar
