Bavarian Pretzel

I won't bombard you with a storytime until the end of the recipe, if I decide I care enough. If you wanna read it, scroll down. Maybe eventually I'll figure out how to code the jump ahead thing.


Ingredients:

  1. 1 tsp active dry yeast
  2. 1 tsp light brown sugar
  3. 5 tbsp (50 g) warm water
  4. 1 cup all-purpose flour
  5. Pinch of salt

For the baking soda bath:

  1. 4 cups water
  2. ¼ cup baking soda

Directions:

  1. Make the dough:
    1. In a small bowl, mix yeast, sugar, and 1 tbsp of the warm water. Let sit for 5 minutes
    2. Stir in the rest of the water as well as flour and salt
    3. Mix then knead for 5 minutes
  2. Shaping the pretzel and rising:
    1. Use a cup (or rolli ng pin if you aren't a broke kid) to roll out the dough into a 30in long rope
    2. Shape into pretzel and transfer it to a lightly greased baking sheet
    3. Let the dough sit in a safe place for 30 minutes to become fluffy
  3. Baking soda bath:
    1. Preheat oven to 450°F
    2. Boil the 4 cups of water and then bring to simmer
    3. Slowly add the baking soda (be careful it bubbles up)
    4. Place the pretzel in the bath for ONLY 30 seconds and remove with a spatula
    5. Bake for 12 minutes
